HEALTHY PUMPKIN MUFFINS


Preheat oven to 350 and spray bread pan or muffin pan with butter spray.


Ingredients:


4 cups of oatmeal or oat bran uncooked

4 large eggs

1 packet of dry powdered milk

1 large can of 100% pure pumpkin (Make sure it isn’t the mix which has sugar)

1/3 cup of vegetable oil, add a quick extra dash for moister bread

4-5 cups of Stevia sweetener, baker’s bag (Walmart has the best price ~$5.00)

(You may NOT need Stevia if you do not like very sweet!)

1 tablespoon of Chia Seeds

1 tablespoon of ground Flax


Steps to make it:

Combine eggs, pumpkin, stevia and oil. Except for the oatmeal or oat bran, add

the other dry ingredients. [ We used oatmeal.] Slowly, add oatmeal or oat bran

one cup at a time, and stir.


TIP: Make one small cookie first and bake to be sure the sweetness and

consistency is correct. You can always add more ingredients and them make the

entire pan. Pour in greased pans leaving 1-2 inches at the top.


Bake 10-30 minutes depending on size of pan until fork inserted comes up clean.


For weight loss only eat a slice or muffin 2-3 times a week, it will freeze well.
