CHOCOLATE CHIP PEANUT BUTTER OATMEAL COOKIES


Ingredients:


1 banana (overripe and peeled)

½ cup unsweetened applesauce

1 teaspoon cinnamon (ground)

¼ cup peanut butter (creamy or smooth)

¼ cup maple syrup (or agave)

1 teaspoon sea salt

½ teaspoon baking soda

1 tablespoon of ground Flax seed

1 tablespoon of Chia seeds

3 cups oatmeal (uncooked)

½ cup chocolate chips

¼ cup all-purpose flour


Steps to make it:

Preheat oven to 375. Grease a cookie sheet with butter spray.

In a large mixing bowl mash banana with potato masher or fork until smooth.

Stir (do not use mixer) applesauce and cinnamon to combine.

Add peanut butter, and use a mixer to mix well maple syrup, sea salt and baking

soda.


Add the oatmeal, one cup at a time stirring well each time. The dough will be wet

and tacky at his point. Add chocolate chips and bring them together with the addition of the all-purpose flour.


TIP: Make one small cookie first and bake to be sure the sweetness and

consistency is correct. You can always add more ingredients and them make the

entire pan.


Using a large spoon, shape the dough into about once inch round. Drop them 2

inches apart on greased cookie sheet. Bake for 4 minutes or until brown on edges and bottom. Let cool before serving. They will freeze well.
