CHEWY OATMEAL RAISIN COOKIES

Ingredients:
1 ½ cup flour
1 teaspoon baking soda
1 ½ teaspoons cinnamon
1 teaspoon salt
1 ¼ cups butter (softened)
¾ cup brown sugar (packed)
1 ½ cups of Stevia (zero calorie natural sweetener, bakers bag, Walmart ~ $5.00)
1 large egg
1 teaspoon vanilla
1 tablespoon Chia Seeds
I tablespoon ground Flax Seed
3 cups of oatmeal (uncooked)
1 ¼ cups raisins
Steps to make cookies:
Take butter out to soften.
Preheat oven to 375.
Grease cookie sheet with butter spray.
Combine flour, baking soda, cinnamon, and the salt in a bowl, stir and set aside.
In a separate bowl, cream together butter and stevia with an electric mixer but
not too long, just till smooth.
Add the egg and vanilla. Combine completely and slowly add flour mixture from
other bowl until combined. Stir in oatmeal and raisins.
TIP: Make one small cookie first and bake to be sure the sweetness and
consistency is correct. You can always add more ingredients and them make the
entire pan.
Roll dough into round circles and drop 2 inches apart on greased cookie sheet.
Bake only 4 minutes and make sure just brown on bottom.
Allow to cool.
